Homemade Rasmalai from scratch with pictures!





I am not such a big fan of sweets or sweet dishes! Probably that is the reason it took me this long to post a recipe of sweet dish! I will keep these coming from now on, this is a promise. Apologies, I could not click a picture of the Rasmali after serving in a bowl, after taking it out of the fridge it was over in just 15 min. 

It was on the last saturday, i was lazing on the couch and browsing through my Facebook, not sure if that was a coincidence or what, 3 of my friends posted that they are having Rasmalai and how they are loving it. One of them made it from scratch at home! That sounded interesting, making it at home meant i can control the sugar level and i wanted to try it!! 



Ras malai made with literally 4 ingredients milk, sugar, nuts, kesar. I did not have unsalted pistachios so i skipped that too and for a first attempt it was really good! I got a 8/10 from my MIL, who is a huge fan of sweets and will judge the sweet by its taste and will be critical as well!  


What do you need to make Ras malai?

We need 2 main things the milk and the 'Malai Patties'. Let us begin making them parallel to each other.   

Step 1 is to put about 1ltr of milk for boiling, this has to become half and then we will add sugar and kesar to this. Put the milk for boil on low flame and make sure it reduces to half. Once the milk has considerably thickened add the kesar and sugar. The milk will turn to a nice yellow color. 

Note: for 1 liter Milk i added about 5-6 strands of kesar. 





Step 2 lets make the 'Malai Patties'. For this we will need to make paneer / chana out of the milk. For this we will need to boil 1 liter of milk, one you see the milk has boiled add half a cup of water and bring it to a boil, once it boils add  4-5 ml of vinegar. You will see the milk will start to break apart and can see the water separate from the chana.  






Step 3 is to strain this Chana run all this through a seive and collect the chana. leave it like that for 8-10 min. This will ensure that all the water in the chana has drained out. 





Step 4 kneed this chana for 4-5 into a smooth dough. make patties of desired shape and keep aside. 

Note: Half liter milk should make about 4-5 big malai patties and 8-10 small ones. 





Step 5 check on the milk you left to reduce. In a pressure cooker add water and sugar. Water enough to immerse all the patties and sugar as per your taste. We will use this sugar syrup to steam cook the patties, this process ensures that the patties become smooth! once you see that the sugar has melted add the patties and steam cook for 1 whistle. 





Step 6 Once the cooker has cooled down slowly remove the Malai Patties and drop them in the milk and cook for 4-5 min.Add lots of unsalted Pistachios. Once it cools down put it in the fridge and serve chilled.
